WHere is a simplified version of a beverage featured on our latest menu. It's a party-sized prepared mix that's loaded with the flavours of the festive period, which makes it perfect for hosting a celebration. Save the extra cordial for breakfast cocktails, desserts, or for another batch of the drink.

Makes enough for 10 people
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Combine the listed ingredients in a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, take off the heat and leave to cool fully. Transfer into an sealable bottle, seal and store chilled, where it will keep for about four weeks.
Preparing the Premix: Combine all the liquids into one large bottle, let it rest for 60 minutes, then strain , ideally through cheesecloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml of the batch mix to a stirring glass containing ice, gently stirring carefully for one minute to chill. Pour into an frosted cocktail glass or similar, top with some cranberries and complete it with a light spray of mandarin oil over the top.
